Simply Organic Gluten Free Banana Bread

Usually, when I find a new product in the store, I feel compelled to try it. Each year, gluten free products seem to get better and better and increasingly more healthy. I confess banana bread is one of my weaknesses so when I saw Simply Organic come out with a banana bread, I quickly checked the nutritional facts to find out it was extremely low in fat, something gluten free food is generally not. The next thing I always check is the ingredients. If its alien and hard to pronounce or has 400 different things in it to make it taste like the product it is mimicking, I generally pass. (That was a rule of my doctor mom, “If you can’t say it, have to sound it out like a 3rd grader, or you get tired reading the ingredients, you probably shouldn’t be eating it.”) So with around 10 ingredients, all of which I knew, I bought the product at Stop & Shop* of all places.

I decided to make the bread in two smaller pans appr. 2×7 instead of the recommended 9×4 because I wanted to freeze one. (I am the only gluten free person in my house and I am dieting at the moment.)

I baked them for approximately 45 minutes (every 15 minutes I turn 180 degrees because my oven cooks uneven.) I also lowered my oven temp 10 degrees because it always seems to burn the edges of whatever i am cooking. They came out super moist and really yummy. I think this might be the best gluten free instant bread mix I have found yet. I didn’t wait for it to cool down in the fridge before I ate it so I will have to update later on how it is cold. There is also a vegan version of the recipe on the box as well.

I highly recommend this mix for anyone who loves banana bread.

*Stop & Shop is one of the best grocery stores to shop at if you have to shop for a gluten free and a normal household if you can only make 1 stop. They make great strides in providing a huge gluten free section as well as Nature’s Promise products.

    Hi, I’ve tried this but the thing I didn’t like is that it already has cinnamon added (and too much that is was overwhelming) and since I like to add mini chocolate chips, I do not enjoy the addition of the cinnamon flavour. I think if you want cinnamon, you should be able to add it yourself (who doesn’t have that on hand?). If you’re a cinnamon lover, this mix may be perfect.

    Ahhh, I am a cinnamon nut which is probably why I loved it. I put it in everything from my coffee to on my toast. I tested it again though after I read this post looking at it from a non-cinnamon obsessed perspective and it is significant.

    I never thought about putting chocolate chips in it but I did consider using egg whites to make it healthier and turning it into breakfast.
